A small oven in Sakae.

Sakuraya opened in 1998 on a quiet corner of Sakae, Nagoya. What began as a two-person shop selling shokupan to the neighbourhood has stayed, to this day, a two-oven bakery. We measure our flour by hand and our success by whether the cabinet is empty by evening.

The flour

We work with a single mill in Hokkaido. Sacks arrive weekly and rest three days before we bake with them — a small ritual that changes everything about the crumb.

The rhythm

Doughs are mixed in the late afternoon and rest cold overnight. At 5:30 the first shokupan comes out; by 8:00 the cakes are finished, and the door opens.

Never day-old

Anything left at closing is donated to a nearby children's centre. It's why we bake in small batches — and why some days sell out early.

2-14-3 Sakae, Naka-ku, Nagoya. Open 8:00 – 19:00, closed Tuesdays. We take orders online for same-day pick-up or delivery within the city.
